The Ontario contract, which had ended in April 2007, prompted us to produce a higher-quality line of knives, stepping away from the mass production capabilities of Ontario. Introducing the new ESEE Line (Formerly RAT Cutlery), which is considered "mid-tech" in terms of quality and manufacturing procedures. This means that ESEE knives feature upgrades in sheathing, fit, finish, and detail. Most importantly, ESEE is now in a position to respond quickly to new product development and upgrades to existing lines.

All of our designs are tailored to meet the needs of desirable field cutlery, emphasizing toughness, comfort, and cutting efficiency. Unlike many manufacturers, ESEE does not simply release a new knife because it looks appealing on paper. Instead, we personally field-test each new design prototype before it reaches the production stage. Once we have made the final design tweaks and the knife is put into production, we test the design again during field outings Stateside and jungle survival classes in the Peruvian Amazon. We also have users around the world who test our knives and provide feedback.
